Quinoa and sweet potatoe cakes…the finale 

So here is the final product! One of my all time favourite meals (and there is usually leftovers for the days to follow).

I like to make this a “meatless Monday” meal but it is great whenever you feel like a delicious change.

The aioli is simple to make as well, 1/2 cup of egg free mayonnaise, 1/2 tsp of paprika, 5 garlic cloves minced and some freshly squeezed lemon juice (2tbs but I just squeeze a bunch in until I’m done), and I personally like like to add some cayenne pepper for a little kick, about 1/2tsp. Mix up ingredients in the food processor and voila, you have lemon and garlic aioli!!! Mmmmm.
